after. protein pancakes and probiotics.

it's been a few days. i don't have anything thrilling or life-changing to say, but maybe that's just my impression of my own thoughts, and all ya'll think that the words that pour out of my mouth are thrilling and life-changing. doubtful.

my week has been awesome, and here's why: protein pancakes for breakfast. these are so easy and so good. here's the basic method that i got from these girls: you take a banana. you mush it up real good with a potato masher or a fork. once it's all mushy, add 1 scoop of protein powder, a dash of cinnamon, and an egg. mix it all up. if it's a bit too thick, you can thin it out with just a splash of almond or coconut milk. if you thin it out too much, it's fucking over and you may as well go back to bed. so watch it, susie homemaker.
all this image needs is some antidepressants.

then you just pour the batter, like one big pancake, into a hot pan that's been slicked down with a bit of coconut oil. the batter is a different texture than a typical pancake, so it needs to cook a bit longer than a typical pancake, like, 3-4 minutes on the first side before you flip it.

okay. so that's the basic method. however, i'm trying to eat vegetables with every meal, and a banana is not a vegetable. so i made this protein pancake in my vitamix and i added a handful of spinach:
it's st patty's day in january.
green protein pancake with toasted coconut and cashews on top.

this was the most vibrant shade of green that the kids almost wanted a bite. almost. and i promise you, i did not taste the spinach. "ha ha ashley, you got some s'nach and you didn't even taste it..." not sure that's the proper usage of the term "s'nach". i digress.

what else has happened this week. i'm starting to regain my sensation of taste and smell, so it would appear that the antibiotics are working in all areas, except for one:
yo'gurt. kombucha probiotic blend.
and i washed all of that down with a probiotic capsule.

my lady bits do not like antibiotics. it's not fun. i'm this close to shoving yo'gurt just straight up all in there.

i went to a strength training class on monday. it felt really good to sweat, but i've barely been able to walk since then. so i haven't worked out since, which was not my goal for this week. i'm planning on hitting up another strength class tomorrow and then running this weekend.

until next time,
ashley "she's happier now" rebekah
